- 1 lb ground beef
- 1 lb ground pork
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1 large egg
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup roasted red peppers, chopped
- 1 cup shredded mozzarella cheese
- 2 cups marinara sauce
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, garlic, egg, salt, and pepper in a large bowl. Mix well.
- Shape the meat mixture on a sheet of parchment paper into a rectangle.
- Spread the chopped roasted red peppers and mozzarella cheese over the meat.
- Roll the meatloaf from the long side to form a log, sealing the filling inside.
- Place the meatloaf in a baking dish and pour the marinara sauce over the top.
- Bake for 60 minutes or until the meatloaf is cooked through.
- Let it rest for a few minutes before slicing and serving.
Notes
Allow the meatloaf to rest after baking to keep it juicy. Experiment with different fillings for variety.
