Description

A comforting blend of ground beef and pork, stuffed with roasted red peppers and mozzarella cheese, all enveloped in a savory loaf.


Ingredients

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup roasted red peppers, chopped
  • 1 cup shredded mozzarella cheese
  • 2 cups marinara sauce


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, garlic, egg, salt, and pepper in a large bowl. Mix well.
  3. Shape the meat mixture on a sheet of parchment paper into a rectangle.
  4. Spread the chopped roasted red peppers and mozzarella cheese over the meat.
  5. Roll the meatloaf from the long side to form a log, sealing the filling inside.
  6. Place the meatloaf in a baking dish and pour the marinara sauce over the top.
  7. Bake for 60 minutes or until the meatloaf is cooked through.
  8. Let it rest for a few minutes before slicing and serving.

Notes

Allow the meatloaf to rest after baking to keep it juicy. Experiment with different fillings for variety.
