- 4 large bell peppers
- 1 cup cooked rice
- 1 pound ground beef
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, cook the ground beef, onion, and garlic until the meat is browned.
- Add the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper to the skillet and mix well.
- Stuff the mixture into the bell peppers and place them in a baking dish.
- Top each pepper with shredded cheese.
- Bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
Notes
- Feel free to substitute ground turkey or chicken for the beef.
- Add additional vegetables to the filling for extra nutrition.
- These can be made ahead of time and frozen before baking.
