  • 1 cup black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 red bell pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 avocado, diced
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes and pierce them with a fork.
  3. Bake the sweet potatoes for 45-60 minutes, or until tender.
  4. In a bowl, mix black beans, corn, red bell pepper, cumin, chili powder, salt, and pepper.
  5. Once the sweet potatoes are done, let them cool slightly, then cut them open.
  6. Stuff the sweet potatoes with the bean and corn mixture.
  7. Top with diced avocado and garnish with fresh cilantro.
  8. Serve warm and enjoy!
