- 4 medium sweet potatoes
- 1 cup black beans, rinsed and drained
- 1 cup corn, frozen or canned
- 1 red bell pepper, diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 avocado, diced
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the sweet potatoes and pierce them with a fork.
- Bake the sweet potatoes for 45-60 minutes, or until tender.
- In a bowl, mix black beans, corn, red bell pepper, cumin, chili powder, salt, and pepper.
- Once the sweet potatoes are done, let them cool slightly, then cut them open.
- Stuff the sweet potatoes with the bean and corn mixture.
- Top with diced avocado and garnish with fresh cilantro.
- Serve warm and enjoy!
