- 1 cup bread crumbs

- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chicken broth
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and sauté onions and celery until soft.
- In a bowl, combine sautéed vegetables, bread crumbs, cranberries, walnuts, thyme, salt, and pepper.
- Carefully butterfly the turkey breast and spread the stuffing mixture evenly inside.
- Roll the turkey breast tightly and secure with kitchen twine.
- Place the stuffed turkey breast in a roasting pan and pour chicken broth over it.
- Cover with foil and bake for 1.5 hours, then remove the foil and bake for an additional 30 minutes until golden brown.
- Let it rest for 10 minutes before slicing and serving.
