  • 1 cup bread crumbs
  • 1/2 cup chopped onions
  • 1/2 cup chopped celery
  • 1/4 cup dried cranberries
  • 1/4 cup chopped walnuts
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chicken broth
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions and celery until soft.
  3. In a bowl, combine sautéed vegetables, bread crumbs, cranberries, walnuts, thyme, salt, and pepper.
  4. Carefully butterfly the turkey breast and spread the stuffing mixture evenly inside.
  5. Roll the turkey breast tightly and secure with kitchen twine.
  6. Place the stuffed turkey breast in a roasting pan and pour chicken broth over it.
  7. Cover with foil and bake for 1.5 hours, then remove the foil and bake for an additional 30 minutes until golden brown.
  8. Let it rest for 10 minutes before slicing and serving.
