A delicious and healthy alternative to traditional ice cream, made with cottage cheese and no added sugar.
Ingredients

- 2 cups cottage cheese
- 1/2 cup unsweetened almond milk
- 1/4 cup erythritol or other sugar substitute
- 1 teaspoon vanilla extract
- 1/2 cup fresh fruit (optional)
Instructions
- In a blender, combine the cottage cheese, almond milk, erythritol, and vanilla extract.
- Blend until smooth and creamy.
- If desired, fold in fresh fruit.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
- Transfer to a container and freeze for at least 2 hours before serving.

- For a creamier texture, let the ice cream sit at room temperature for a few minutes before scooping.
