- 1 cup sweet chili sauce
- 1 cup jasmine rice
- 1 can coconut milk
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- Salt and pepper to taste

- Cilantro for garnish
Instructions
- Cook the jasmine rice according to package instructions.
- Season the chicken breasts with salt and pepper, and grill or pan-sear until cooked through.
- Heat the sweet chili sauce over medium heat in a saucepan.
- Coat the cooked chicken with the sweet chili sauce once it’s done.
- Mix coconut milk with lime juice and lime zest in a separate bowl.
- Serve the chicken over rice, drizzled with the coconut lime sauce.
- Garnish with green onions and cilantro.
Notes
For extra flavor, marinate the chicken in sweet chili sauce for an hour before cooking. If using a grill, preheat for better grill marks.
