Description

A delightful bowl featuring succulent chicken with sweet chili sauce, served over jasmine rice and drizzled with a refreshing coconut lime sauce.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup sweet chili sauce
  • 1 cup jasmine rice
  • 1 can coconut milk
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • Salt and pepper to taste
  • Green onions for garnish
  • Cilantro for garnish


Instructions

  1. Cook the jasmine rice according to package instructions.
  2. Season the chicken breasts with salt and pepper, and grill or pan-sear until cooked through.
  3. Heat the sweet chili sauce over medium heat in a saucepan.
  4. Coat the cooked chicken with the sweet chili sauce once it’s done.
  5. Mix coconut milk with lime juice and lime zest in a separate bowl.
  6. Serve the chicken over rice, drizzled with the coconut lime sauce.
  7. Garnish with green onions and cilantro.

Notes

For extra flavor, marinate the chicken in sweet chili sauce for an hour before cooking. If using a grill, preheat for better grill marks.
