A delicious fall recipe featuring sweet potatoes, brie cheese, cranberries, and pecans.

- 2 medium sweet potatoes
- 8 oz brie cheese
- 1 cup fresh cranberries
- 1/2 cup pecans
- 2 tablespoons maple syrup
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and cube the sweet potatoes, then toss them with olive oil, salt, and pepper.
- Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
- In a small saucepan, combine cranberries and maple syrup over medium heat until the cranberries burst.
- Once the sweet potatoes are done, remove them from the oven and top with brie cheese, cranberries, and pecans.
- Return to the oven for an additional 5-10 minutes until the brie is melted.
- Serve warm and enjoy!
