- 2 medium sweet potatoes
- 1 ½ cups all-purpose flour
- 1 egg
- ½ teaspoon salt
- ¼ teaspoon nutmeg (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Pierce the sweet potatoes with a fork and bake for about 45 minutes or until tender.
- Let the sweet potatoes cool, then peel and mash them in a bowl.
- Add the egg, salt, and nutmeg to the mashed sweet potatoes and mix well.
- Gradually add the flour, mixing until a dough forms.
- Turn the dough onto a floured surface and knead gently until smooth.
- Divide the dough into smaller portions and roll each into a long rope, then cut into bite-sized pieces.
- Press each piece with a fork to create ridges.
- Bring a pot of salted water to a boil and cook the gnocchi until they float to the surface.
- Remove with a slotted spoon and serve with your favorite sauce.
Notes
- Make sure not to overwork the dough to keep the gnocchi light and fluffy.
- These can be frozen before cooking for later use.
