- 2 large sweet potatoes
- 4 oz goat cheese
- 1 cup fresh cranberries
- 1/2 cup balsamic vinegar
- 1/4 cup honey
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the sweet potatoes into 1/2 inch rounds and place them on a baking sheet.
- Drizzle with olive oil, and season with salt and pepper.
- Bake for 25-30 minutes, flipping halfway through, until tender and slightly caramelized.
- In a saucepan, combine cranberries, balsamic vinegar, and honey. Cook over medium heat until the cranberries burst and the mixture thickens, about 10 minutes.
- Remove the sweet potato rounds from the oven and let cool slightly.
- Top each sweet potato round with a dollop of goat cheese and drizzle with the cranberry balsamic glaze.
- Serve warm and enjoy!
