  • 1 avocado, sliced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the diced sweet potatoes with olive oil, cumin, chili powder, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes, or until tender.
  4. While the sweet potatoes are roasting, warm the corn tortillas in a skillet over medium heat.
  5. Assemble the tacos by placing roasted sweet potatoes, black beans, and avocado slices on each tortilla.
  6. Garnish with fresh cilantro and serve with lime wedges.
