  • 1 cup shredded cheese (cheddar or your choice)
  • 1 can black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1/2 cup sliced jalapeños
  • 1 avocado, diced
  • 1/4 cup sour cream
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven according to the tater tot package instructions.
  2. Spread the sweet potato tater tots on a baking sheet and bake until crispy.
  3. Once the tater tots are done, remove them from the oven and layer them on a serving platter.
  4. Top the tater tots with black beans, diced tomatoes, jalapeños, and shredded cheese.
  5. Return the platter to the oven and bake until the cheese is melted.
  6. Remove from the oven and add diced avocado and a dollop of sour cream on top.
  7. Garnish with fresh cilantro before serving.
