A creative and tasty take on traditional nachos using sweet potato tater tots.

- 1 bag of sweet potato tater tots
- 1 cup shredded cheese (cheddar or your choice)
- 1 can black beans, drained and rinsed
- 1 cup diced tomatoes
- 1/2 cup sliced jalapeños
- 1 avocado, diced
- 1/4 cup sour cream
- Fresh cilantro for garnish
Instructions
- Preheat your oven according to the tater tot package instructions.
- Spread the sweet potato tater tots on a baking sheet and bake until crispy.
- Once the tater tots are done, remove them from the oven and layer them on a serving platter.
- Top the tater tots with black beans, diced tomatoes, jalapeños, and shredded cheese.
- Return the platter to the oven and bake until the cheese is melted.
- Remove from the oven and add diced avocado and a dollop of sour cream on top.
- Garnish with fresh cilantro before serving.
Notes
- Feel free to customize toppings based on your preferences.
- For a spicier version, add more jalapeños or a drizzle of hot sauce.
