			- 1 lb ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 cups chicken broth
- 2 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and bell pepper, sauté until softened.
- Stir in minced garlic and cook for another minute.
- Add ground turkey, cooking until browned.
- Mix in diced sweet potatoes, black beans, diced tomatoes, chicken broth, chili powder, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until sweet potatoes are tender.
- Adjust seasoning as needed and serve hot.
Notes
- Can be made in advance and stored in the refrigerator for up to 3 days.
- Freezes well for up to 3 months.
- Top with avocado or cilantro for added flavor.
