Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups chicken broth
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and bell pepper, sauté until softened.
  3. Stir in minced garlic and cook for another minute.
  4. Add ground turkey, cooking until browned.
  5. Mix in diced sweet potatoes, black beans, diced tomatoes, chicken broth, chili powder, cumin, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until sweet potatoes are tender.
  7. Adjust seasoning as needed and serve hot.
