- 8 corn tortillas
- 2 cups shredded Swiss cheese
- 1 cup cooked chicken, shredded
- 1 can (10 oz) green enchilada sauce
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the shredded chicken, half of the Swiss cheese, sour cream, green onions, cumin, salt, and pepper.
- Warm the corn tortillas in a skillet until pliable.
- Fill each tortilla with the chicken mixture and roll them up.
- Place the rolled tortillas seam-side down in a baking dish.
- Pour the green enchilada sauce over the top and sprinkle with the remaining Swiss cheese.
- Bake for 20-25 minutes or until the cheese is melted and bubbly.
- Serve hot, garnished with additional green onions if desired.
Notes
- For a vegetarian option, substitute chicken with black beans or sautéed vegetables.
- Feel free to add more spices for extra heat.
- Can be made ahead and stored in the refrigerator before baking.
