Ingredients

- 1/2 tsp turmeric
- 1 tbsp olive oil
- 2 cups low-sodium vegetable broth
- Salt to taste
- Juice of half a lemon
- Fresh parsley (optional)
Instructions
- Sauté carrots, ginger, and turmeric in olive oil for 5 minutes.
- Add broth, bring to a boil, reduce to simmer for 15 minutes.
- Blend until smooth.
- Add lemon juice, taste, and season.
- Garnish with parsley.
