A delicious and healthy taco casserole perfect for spring dinners.
Ingredients

- 1 lb ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 packet taco seasoning
- 2 cups shredded cheese
- 1 cup salsa
- 6 small tortillas, cut into strips
- 1 cup diced tomatoes
- 1/2 cup chopped green onions
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the ground beef over medium heat until browned.
- Add the black beans, corn, and taco seasoning to the skillet and mix well.
- In a baking dish, layer half of the tortilla strips, followed by half of the beef mixture, half of the salsa, and half of the cheese.
- Repeat the layers with the remaining ingredients.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and top with diced tomatoes and green onions.
- Let it cool for a few minutes before serving.
