Description

A delicious and healthy taco casserole perfect for spring dinners.


Ingredients

Scale
  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 2 cups shredded cheese
  • 1 cup salsa
  • 6 small tortillas, cut into strips
  • 1 cup diced tomatoes
  • 1/2 cup chopped green onions


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the ground beef over medium heat until browned.
  3. Add the black beans, corn, and taco seasoning to the skillet and mix well.
  4. In a baking dish, layer half of the tortilla strips, followed by half of the beef mixture, half of the salsa, and half of the cheese.
  5. Repeat the layers with the remaining ingredients.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and top with diced tomatoes and green onions.
  8. Let it cool for a few minutes before serving.
