A delicious and easy-to-make taco rice casserole perfect for spring dinners.
Ingredients

- 1 lb ground beef
- 1 cup uncooked rice
- 2 cups water
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups shredded cheese
- 1/2 cup chopped green onions
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat until fully cooked.
- Add the rice, water, black beans, corn, taco seasoning, and salsa to the skillet. Stir to combine.
- Bring the mixture to a boil, then reduce heat and cover. Simmer for 20 minutes or until the rice is tender.
- Transfer the mixture to a greased baking dish and top with shredded cheese.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped green onions before serving.
