Description

A delicious and easy-to-make taco rice casserole perfect for spring dinners.


Ingredients

  • 1 lb ground beef
  • 1 cup uncooked rice
  • 2 cups water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups shredded cheese
  • 1/2 cup chopped green onions

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat until fully cooked.
  3. Add the rice, water, black beans, corn, taco seasoning, and salsa to the skillet. Stir to combine.
  4. Bring the mixture to a boil, then reduce heat and cover. Simmer for 20 minutes or until the rice is tender.
  5. Transfer the mixture to a greased baking dish and top with shredded cheese.
  6. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  7. Garnish with chopped green onions before serving.
