Description

Delicious sweet potatoes filled with seasoned ground beef, topped with melted cheese and fresh toppings—a perfect comforting meal.


Ingredients

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa
  • For topping: diced avocado, sliced jalapeño, sour cream, chopped cilantro, lime wedges


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the sweet potatoes and poke them a few times with a fork.
  3. Rub the potatoes with olive oil and place them on a baking tray lined with foil.
  4. Bake for about 45–60 minutes, or until soft.
  5. Heat a skillet over medium heat.
  6. Toss in the ground beef and cook until browned, about 7–8 minutes.
  7. Add taco seasoning and water, mix, and let it simmer until thick.
  8. When the sweet potatoes are ready, let them cool slightly.
  9. Cut lengthwise, fluff the insides with a fork, and gently mash them.
  10. Spoon the taco beef over each potato, then cover with cheddar cheese.
  11. Spoon salsa over the top and add desired toppings.

Notes

For a vegetarian option, substitute the ground beef with black beans or lentils.
