- 4 medium sweet potatoes
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 cup shredded cheddar cheese
- 1/2 cup salsa
- For topping: diced avocado, sliced jalapeño, sour cream, chopped cilantro, lime wedges
Instructions
- Preheat the oven to 400°F (200°C).
- Scrub the sweet potatoes and poke them a few times with a fork.
- Rub the potatoes with olive oil and place them on a baking tray lined with foil.
- Bake for about 45–60 minutes, or until soft.
- Heat a skillet over medium heat.
- Toss in the ground beef and cook until browned, about 7–8 minutes.
- Add taco seasoning and water, mix, and let it simmer until thick.
- When the sweet potatoes are ready, let them cool slightly.
- Cut lengthwise, fluff the insides with a fork, and gently mash them.
- Spoon the taco beef over each potato, then cover with cheddar cheese.
- Spoon salsa over the top and add desired toppings.
Notes
For a vegetarian option, substitute the ground beef with black beans or lentils.
