- 2 chicken breasts
- 1/4 cup honey
- 1/4 cup lime juice
- 1 avocado
- 1 cup cooked rice
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a bowl, mix honey and lime juice to create the marinade.
- Marinate the chicken breasts in the honey lime mixture for at least 30 minutes.
- Grill the marinated chicken until fully cooked, about 6-7 minutes per side.
- While the chicken is grilling, mash the avocado and mix it with the cooked rice, adding salt and pepper to taste.
- Once the chicken is cooked, slice it and layer it over the avocado rice.
- Garnish with fresh cilantro before serving.
Notes
- For extra flavor, add garlic to the marinade.
- Serve with lime wedges for an added tang.
