- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (28 oz) diced tomatoes
- 2 cups beef broth
- 2 tbsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and minced garlic, sauté until softened.
- Add ground beef and cook until browned.
- Stir in chili powder, cumin, salt, and pepper.
- Add diced tomatoes, kidney beans, black beans, corn, and beef broth.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Serve hot, garnished with fresh herbs if desired.

- Feel free to add more vegetables like bell peppers or carrots for extra nutrition.
