- 1 lb ground beef
- 1 can (15 oz) chili beans
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup corn
- 1 package (8.5 oz) cornbread mix
- 1 cup shredded cheese
- 1/2 cup milk
- 1 egg
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, brown the ground beef over medium heat until fully cooked.
- Add the chili beans, diced tomatoes, corn, chili powder, cumin, salt, and pepper to the skillet. Stir to combine and let simmer for 5 minutes.
- In a separate bowl, mix the cornbread mix, milk, and egg until well combined.
- Spread the beef mixture evenly in a greased pie dish.
- Pour the cornbread batter over the beef mixture.
- Sprinkle shredded cheese on top.
- Bake in the preheated oven for 25-30 minutes or until the cornbread is golden brown.
- Let cool for a few minutes before serving.
Notes
- Feel free to add jalapeños for extra heat.
- This dish can be made ahead of time and reheated.
- Serve with sour cream or guacamole for added flavor.
