Description

A delicious and hearty dish that combines the flavors of tamales with a savory pie crust.


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) chili beans
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup corn
  • 1 package (8.5 oz) cornbread mix
  • 1 cup shredded cheese
  • 1/2 cup milk
  • 1 egg
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, brown the ground beef over medium heat until fully cooked.
  3. Add the chili beans, diced tomatoes, corn, chili powder, cumin, salt, and pepper to the skillet. Stir to combine and let simmer for 5 minutes.
  4. In a separate bowl, mix the cornbread mix, milk, and egg until well combined.
  5. Spread the beef mixture evenly in a greased pie dish.
  6. Pour the cornbread batter over the beef mixture.
  7. Sprinkle shredded cheese on top.
  8. Bake in the preheated oven for 25-30 minutes or until the cornbread is golden brown.
  9. Let cool for a few minutes before serving.

Notes

  • Feel free to add jalapeños for extra heat.
  • This dish can be made ahead of time and reheated.
  • Serve with sour cream or guacamole for added flavor.
