Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 1 cup sour cream
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup sliced green onions
  • 1 packet taco seasoning

Instructions

  1. In a large mixing bowl, combine the black beans, corn, and diced tomatoes.
  2. Add the sour cream, cream cheese, and taco seasoning to the bowl and mix until well combined.
  3. Fold in the shredded cheddar cheese and sliced green onions.
  4. Transfer the mixture to a baking dish and spread it evenly.
  5. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until heated through and bubbly.
  6. Serve warm with tortilla chips or fresh vegetables.
