Instructions
- In a large bowl, combine the shredded cabbage, carrots, chicken, red bell pepper, green onions, and cilantro.
- In a separate bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, salt, and pepper until smooth.
- Pour the dressing over the salad and toss to combine.
- Top with chopped peanuts before serving.
- Serve immediately or refrigerate for up to an hour before serving for the flavors to meld.
