- 2 cups cooked jasmine rice
- 1 pound shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 teaspoon sugar
- 2 green onions, chopped
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and sauté until fragrant.
- Add the shrimp and cook until they turn pink.
- Stir in the mixed vegetables and cook for a few minutes until tender.
- Push the shrimp and vegetables to one side of the skillet and pour the beaten eggs into the other side, scrambling them until fully cooked.
- Add the cooked rice, soy sauce, fish sauce, and sugar to the skillet, mixing everything together.
- Cook for an additional 2-3 minutes, stirring frequently.
- Garnish with chopped green onions and cilantro before serving.
