Description

Deliciously soft and coffee-flavored Madeleines inspired by the classic Italian dessert, Tiramisu.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/4 cup brewed espresso, cooled
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Cocoa powder for dusting


Instructions

  1. Preheat your oven to 375°F (190°C) and grease the madeleine pan.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, beat the eggs and sugar until light and fluffy.
  4. Mix in the melted butter, espresso, and vanilla extract.
  5. Gradually fold in the dry ingredients until just combined.
  6. Fill each madeleine mold about 2/3 full with batter.
  7. Bake for 10-12 minutes or until the edges are golden brown.
  8. Let them cool slightly before removing from the pan.
  9. Dust with cocoa powder before serving.

Notes

  • For an eggless version, substitute eggs with a flaxseed mixture.
