Description
Deliciously soft and coffee-flavored Madeleines inspired by the classic Italian dessert, Tiramisu.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/4 cup brewed espresso, cooled
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Cocoa powder for dusting
Instructions
- Preheat your oven to 375°F (190°C) and grease the madeleine pan.
- In a bowl, whisk together the flour, baking powder, and salt.
- In another bowl, beat the eggs and sugar until light and fluffy.
- Mix in the melted butter, espresso, and vanilla extract.
- Gradually fold in the dry ingredients until just combined.
- Fill each madeleine mold about 2/3 full with batter.
- Bake for 10-12 minutes or until the edges are golden brown.
- Let them cool slightly before removing from the pan.
- Dust with cocoa powder before serving.

Notes
- For an eggless version, substitute eggs with a flaxseed mixture.
- These Madeleines can be stored in an airtight container for up to 3 days.
