Description
A classic Irish dish made from potatoes, perfect for celebrating St. Patrick’s Day.
Ingredients

- 2 cups grated raw potatoes
- 1 cup mashed potatoes
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1 large egg
- Butter for frying
Instructions
- In a large bowl, combine the grated raw potatoes and mashed potatoes.
- Add the flour, baking powder, and salt to the potato mixture and mix well.
- In a separate bowl, whisk together the milk and egg.
- Pour the milk and egg mixture into the potato mixture and stir until combined.
- Heat a skillet over medium heat and add butter.
- Drop spoonfuls of the batter onto the skillet and flatten slightly.
- Cook for about 3-4 minutes on each side or until golden brown.
- Remove from the skillet and keep warm while you cook the remaining batter.

Notes
- Serve with sour cream or applesauce for added flavor.
- Boxty can be made ahead of time and reheated in the oven.
- Feel free to add herbs or spices to the batter for extra flavor.
