Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 cups mixed berries (strawberries, blueberries, raspberries)
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a springform pan.
  3. In a separate bowl, beat cream cheese, sugar, and vanilla extract until smooth.
  4. Pour half of the cream cheese mixture over the crust and spread evenly.
  5. Layer half of the mixed berries on top of the cream cheese layer.
  6. Repeat the process with the remaining cream cheese mixture and berries.
  7. Bake for 45 minutes, then let it cool to room temperature.
  8. Refrigerate for at least 4 hours before serving.
  9. Whip heavy cream with powdered sugar until soft peaks form and spread over the top before serving.

Notes

  • For a firmer cheesecake, refrigerate overnight.
  • Feel free to use any combination of berries you prefer.
