- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 cups mixed berries (strawberries, blueberries, raspberries)
- 1 cup heavy cream
- 2 tablespoons powdered sugar
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a springform pan.
- In a separate bowl, beat cream cheese, sugar, and vanilla extract until smooth.
- Pour half of the cream cheese mixture over the crust and spread evenly.
- Layer half of the mixed berries on top of the cream cheese layer.
- Repeat the process with the remaining cream cheese mixture and berries.
- Bake for 45 minutes, then let it cool to room temperature.
- Refrigerate for at least 4 hours before serving.
- Whip heavy cream with powdered sugar until soft peaks form and spread over the top before serving.
Notes
- For a firmer cheesecake, refrigerate overnight.
- Feel free to use any combination of berries you prefer.
- Garnish with additional berries for presentation.
