Description

Ingredients

  • 1 cup shredded cheddar or mozzarella cheese
  • 1 cup diced tomatoes
  • 1 cup cauliflower rice
  • 1/2 cup onion, chopped
  • 1/2 cup bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat. Add chopped onion, bell pepper, and garlic. Sauté until softened.
  3. Add ground turkey to the skillet and cook until browned. Season with Italian seasoning, salt, and pepper.
  4. Stir in diced tomatoes and cauliflower rice until evenly mixed.
  5. Transfer the mixture to a baking dish and sprinkle shredded cheese on top.
  6. Bake in the preheated oven for about 25-30 minutes, until the cheese is bubbly and slightly golden.

For a lower calorie version, you can substitute ground turkey with lean ground beef and use low-fat cheese.
