- 1 pound ground turkey
- 1 cup shredded cheddar or mozzarella cheese
- 1 cup diced tomatoes
- 1 cup cauliflower rice
- 1/2 cup onion, chopped
- 1/2 cup bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat oven to 350°F (175°C).
- Heat olive oil in a skillet over medium heat. Add chopped onion, bell pepper, and garlic. Sauté until softened.
- Add ground turkey to the skillet and cook until browned. Season with Italian seasoning, salt, and pepper.
- Stir in diced tomatoes and cauliflower rice until evenly mixed.
- Transfer the mixture to a baking dish and sprinkle shredded cheese on top.
- Bake in the preheated oven for about 25-30 minutes, until the cheese is bubbly and slightly golden.
- Serve warm and enjoy!
Notes
For a lower calorie version, you can substitute ground turkey with lean ground beef and use low-fat cheese.
