- 1 lb ground turkey
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (28 oz) diced tomatoes
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 cups chicken broth
Instructions
- In a large pot, heat a little oil over medium heat and add the chopped onion and bell pepper. Sauté until softened.
- Add the minced garlic and ground turkey, cooking until the turkey is browned.
- Stir in the chili powder, cumin, paprika, salt, and pepper, cooking for another minute.
- Add the diced tomatoes, kidney beans, black beans, and chicken broth to the pot.
- Bring the mixture to a boil, then reduce heat and let it simmer for 30 minutes.
- Serve hot, garnished with your favorite toppings like cheese or cilantro.
