A hearty and comforting dish that combines ground turkey and Sloppy Joe sauce served in fluffy baked potatoes.

- 4 large baking potatoes
- 1 pound ground turkey
- 1 small onion, diced
- 1 bell pepper, diced
- 1 cup Sloppy Joe sauce
- 1 cup shredded cheese (cheddar or Monterey Jack)
- Salt and pepper to taste
- Olive oil
- Optional toppings: chopped green onions, sour cream
Instructions
- Preheat the oven to 400°F (200°C).
- Scrub the potatoes and poke holes in them with a fork. Rub them with olive oil and sprinkle with salt.
- Bake the potatoes directly on the oven rack for about 45-60 minutes or until tender.
- While the potatoes are baking, heat a skillet over medium heat. Add the ground turkey, onion, and bell pepper, cooking until the turkey is browned and the vegetables are soft.
- Stir in the Sloppy Joe sauce and season with salt and pepper. Heat through.
- Once the potatoes are baked, cut them open and fluff the insides with a fork.
- Top the fluffy potato insides with the turkey Sloppy Joe mixture and sprinkle with cheese.
- Return to the oven for a few minutes until the cheese melts.
- Serve hot, garnished with optional toppings if desired.
