Description

A refreshing and flavorful salad made with potatoes and a variety of fresh vegetables, perfect for any meal.


Ingredients

  • 4 medium potatoes
  • 1 cup green peas
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste


Instructions

  1. Boil the potatoes in salted water until tender, then drain and let cool.
  2. Once cooled, peel and dice the potatoes into bite-sized pieces.
  3. In a large bowl, combine the diced potatoes, green peas, red bell pepper, cucumber, red onion, and parsley.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the salad and gently toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
