Ingredients

- 2 cups cooked chicken, shredded
- 1 cup tortellini
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until translucent.
- Add the shredded chicken and sun-dried tomatoes, cooking for a few minutes.
- Pour in the chicken broth and bring to a boil.
- Add the tortellini and cook according to package instructions.
- Stir in the heavy cream, spinach, and Italian seasoning.
- Season with salt and pepper to taste, and simmer for a few more minutes.
- Serve hot and enjoy!
Notes
- For a lighter version, substitute heavy cream with half-and-half.
- Feel free to add other vegetables like carrots or zucchini.
