- 8 ounces Pasta (any shape)
- 8 ounces Mushrooms (sliced)
- 1/2 cup Sun-Dried Tomatoes (oil-packed or rehydrated)
- 2 cups Spinach (fresh)
- 1 medium Onion (chopped)
- 3 cloves Garlic (minced)
- 1 cup Vegetable or Chicken Broth
- 1 cup Heavy Cream
- 1/2 cup Parmesan Cheese (grated)
- 1/4 teaspoon Red Pepper Flakes (optional)
Instructions
- Boil water in a large pot, then add the pasta. Cook according to the package instructions until al dente.
- Drain the pasta and set aside, reserving a cup of pasta water.
- Heat a large skillet over medium heat. Add the sliced mushrooms and sauté until golden brown and tender.
- Stir in the chopped onion and cook until translucent.
- Add the minced garlic and sauté for an additional minute.
- Incorporate the sun-dried tomatoes and cook for another minute.
- Pour in the vegetable or chicken broth and bring to a simmer.
- Add the fresh spinach and cook until wilted.
- Stir in the heavy cream and season with salt, pepper, and optional red pepper flakes.
- Add the drained pasta to the skillet and toss to combine, adding reserved pasta water as needed.
- Sprinkle with grated parmesan cheese and stir until melted.
- Serve warm and enjoy!
Notes
For added flavor, use freshly grated Parmesan cheese and consider adding herbs like basil or thyme.
