Description

A hearty and flavorful soup combining sausage, potatoes, and Tuscan spices.


Ingredients

Scale
  • 1 lb Italian sausage
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 2 cups kale, chopped
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil for sautéing


Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
  2. Add the Italian sausage to the pot, breaking it up with a spoon, and cook until browned.
  3. Stir in the diced potatoes, chicken broth, and diced tomatoes. Bring to a boil.
  4. Reduce heat and let simmer for about 20 minutes, or until the potatoes are tender.
  5. Add the chopped kale and Italian seasoning, cooking for an additional 5 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot and enjoy!
