  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion, carrots, and celery, and sauté until softened.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the cooked white beans, vegetable broth, diced tomatoes, thyme, and rosemary.
  5. Bring the soup to a boil, then reduce heat and let it simmer for 20-30 minutes.
  6. Season with salt and pepper to taste.
