  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • Fresh strawberries for decoration

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla to the dry ingredients and mix until well combined.
  4. Stir in boiling water until the batter is smooth.
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  8. Whip the heavy cream with powdered sugar until soft peaks form.
  9. Once the cakes are cool, spread whipped cream between the layers and on top of the cake.
  10. Decorate with fresh strawberries and serve.

  • For a richer flavor, consider adding a splash of espresso to the batter.
