Delicious and healthy vegan banana bread bites perfect for spring snacking.
Ingredients

- 3 ripe bananas
- 1/4 cup maple syrup
- 1/4 cup almond milk
- 1 teaspoon vanilla extract
- 1 cup whole wheat flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup walnuts, chopped (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners.
- In a large bowl, mash the ripe bananas until smooth.
- Add the maple syrup, almond milk, and vanilla extract to the mashed bananas and mix well.
- In another bowl, combine the whole wheat flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- If using, fold in the chopped walnuts.
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
- Let the bites cool in the tin for a few minutes before transferring to a wire rack to cool completely.

- These bites can be stored in an airtight container for up to 3 days.
- Feel free to add chocolate chips or dried fruit for extra flavor.
- For a gluten-free version, substitute whole wheat flour with a gluten-free flour blend.
