Description

Delicious and healthy vegan banana bread bites perfect for spring snacking.


Ingredients

Scale
  • 3 ripe bananas
  • 1/4 cup maple syrup
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup walnuts, chopped (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the maple syrup, almond milk, and vanilla extract to the mashed bananas and mix well.
  4. In another bowl, combine the whole wheat flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. If using, fold in the chopped walnuts.
  7. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the bites cool in the tin for a few minutes before transferring to a wire rack to cool completely.
