Ingredients

  • 2 cups rolled oats
  • 1 cup almond flour
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries (fresh or frozen)
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a large bowl, combine rolled oats, almond flour, maple syrup, melted coconut oil, and vanilla extract. Mix until well combined.
  3. Press half of the oat mixture into the bottom of the prepared baking dish to form the crust.
  4. In another bowl, mix the berries with cornstarch and lemon juice, then spread the berry mixture over the crust.
  5. Sprinkle the remaining oat mixture on top of the berries.
  6. Bake for 25-30 minutes or until the top is golden brown.
  7. Allow to cool before slicing into bars.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • Feel free to use any combination of berries you like.
  • For a sweeter crumble, add more maple syrup to the berry mixture.
