- 1 cup black beans, cooked
- 1 cup diced bell peppers
- 1 cup diced tomatoes
- 1 avocado, sliced
- 1 cup spinach
- 4 large whole wheat tortillas
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a skillet, sauté the bell peppers and tomatoes until soft.
- Add the black beans, cumin, chili powder, salt, and pepper. Cook for another 5 minutes.
- Warm the tortillas in a separate pan or microwave.
- Layer the spinach, bean mixture, and avocado on each tortilla.
- Roll the tortillas tightly to form burritos.
- Serve warm and enjoy!
