Description

A refreshing and healthy vegan chicken salad perfect for spring dinners.


Ingredients

Scale
  • 2 cups chickpeas, cooked and mashed
  • 1/2 cup celery, diced
  • 1/2 cup red grapes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup vegan mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the mashed chickpeas, celery, red grapes, and red onion.
  2. In a separate small bowl, mix together the vegan mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
  3. Pour the dressing over the chickpea mixture and stir until well combined.
  4. Chill in the refrigerator for at least 30 minutes before serving.
  5. Serve on a bed of greens or in a sandwich.
