Description
A refreshing and healthy vegan chicken salad perfect for spring dinners.
Ingredients
Scale
- 2 cups chickpeas, cooked and mashed
- 1/2 cup celery, diced
- 1/2 cup red grapes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup vegan mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the mashed chickpeas, celery, red grapes, and red onion.
- In a separate small bowl, mix together the vegan mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
- Pour the dressing over the chickpea mixture and stir until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
- Serve on a bed of greens or in a sandwich.
