- 2 cups mashed sweet potatoes
- 1 cup coconut milk
- 1/2 cup maple syrup
- 1/4 cup almond flour
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon

Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the mashed sweet potatoes, coconut milk, and maple syrup.
- Add the almond flour, vanilla extract, cinnamon, nutmeg, and salt to the mixture and stir until well combined.
- Pour the mixture into a greased pie dish.
- Bake for 45-50 minutes or until the pie is set and slightly golden on top.
- Allow to cool before serving.
Notes
- For a sweeter pie, adjust the maple syrup to taste.
- Serve with vegan whipped cream for added flavor.
