A delicious and guilt-free recipe featuring zucchini and spinach rolled with a flavorful filling.
Ingredients

- 2 large zucchinis
- 2 cups fresh spinach
- 1 cup vegan ricotta cheese
- 1/2 cup nutritional yeast
- 1/4 cup fresh basil, chopped
- 1/4 cup marinara sauce
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the zucchinis lengthwise into thin strips.
- In a skillet, sauté the spinach until wilted.
- In a bowl, mix the sautéed spinach with vegan ricotta, nutritional yeast, basil, salt, and pepper.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Place a spoonful of the filling on each zucchini strip and roll it up.
- Arrange the rolled zucchini in the baking dish and top with remaining marinara sauce.
- Bake for 25-30 minutes until heated through.
Notes
- For a spicier kick, add red pepper flakes to the filling.
- Can be served with a side salad for a complete meal.
