Ingredients

- 1 sheet of puff pastry
- 1 cup of mixed vegetables (bell peppers, zucchini, and spinach)
- 1 cup of ricotta cheese
- 1/2 cup of grated Parmesan cheese
- 1 egg
- Salt and pepper to taste
- 1 tablespoon of olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry and place it in a tart pan.
- In a bowl, mix the ricotta cheese, grated Parmesan, and egg until well combined.
- Add the mixed vegetables to the cheese mixture and season with salt and pepper.
- Pour the vegetable and cheese mixture into the prepared puff pastry shell.
- Drizzle olive oil on top.
- Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown.
- Let it cool slightly before serving.

- Feel free to use any vegetables you have on hand.
- This tart can be served warm or at room temperature.
- For a vegan option, substitute ricotta with a plant-based cheese.
