Ingredients

  • 1 sheet of puff pastry
  • 1 cup of mixed vegetables (bell peppers, zucchini, and spinach)
  • 1 cup of ricotta cheese
  • 1/2 cup of grated Parmesan cheese
  • 1 egg
  • Salt and pepper to taste
  • 1 tablespoon of olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry and place it in a tart pan.
  3. In a bowl, mix the ricotta cheese, grated Parmesan, and egg until well combined.
  4. Add the mixed vegetables to the cheese mixture and season with salt and pepper.
  5. Pour the vegetable and cheese mixture into the prepared puff pastry shell.
  6. Drizzle olive oil on top.
  7. Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown.
  8. Let it cool slightly before serving.
