Ingredients

- 2 lbs beef chuck roast
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 2 cups beef broth
- 8 corn tortillas
- Oil for frying
- 1 avocado
- 1 lime, juiced
- Salt to taste
- Fresh cilantro for garnish
Instructions
- In a slow cooker, combine beef, onion, garlic, cumin, chili powder, salt, pepper, and beef broth.
- Cook on low for 8 hours or until beef is tender.
- Shred the beef with two forks and set aside.
- Heat oil in a skillet over medium heat.
- Fry the corn tortillas until crispy, about 1-2 minutes per side.
- Assemble tacos by adding shredded beef to each tortilla.
- In a bowl, mash avocado with lime juice and salt to make guacamole.
- Top tacos with guacamole and garnish with cilantro.
