- 1 lb ground beef
- 1 packet taco seasoning
- 1 can diced tomatoes (with green chilies)
- 1 cup corn (frozen or canned)
- 1 cup diced bell peppers
- 2 cups shredded cheese (cheddar or Mexican blend)
- 4 cups Fritos
- 1/2 cup sour cream (for serving)
- 1/2 cup sliced green onions (for garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- Brown the ground beef over medium heat until cooked through, then drain any excess fat.
- Stir in the taco seasoning, diced tomatoes, corn, and bell peppers. Cook for about 5 minutes until heated through.
- Layer half of the Fritos in a greased casserole dish, followed by half of the beef mixture, and half of the cheese. Repeat the layers with the remaining ingredients.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
- Serve warm, topped with sour cream and green onions.
Notes
For an extra flavor kick, consider adding black beans or jalapeños to the layers. Experiment with different cheeses for a unique taste.
