Description

A delightful casserole combining seasoned beef, melty cheese, and crunchy Fritos, perfect for family gatherings and weeknight dinners.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can diced tomatoes (with green chilies)
  • 1 cup corn (frozen or canned)
  • 1 cup diced bell peppers
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 4 cups Fritos
  • 1/2 cup sour cream (for serving)
  • 1/2 cup sliced green onions (for garnish)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the ground beef over medium heat until cooked through, then drain any excess fat.
  3. Stir in the taco seasoning, diced tomatoes, corn, and bell peppers. Cook for about 5 minutes until heated through.
  4. Layer half of the Fritos in a greased casserole dish, followed by half of the beef mixture, and half of the cheese. Repeat the layers with the remaining ingredients.
  5. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
  6. Serve warm, topped with sour cream and green onions.

Notes

For an extra flavor kick, consider adding black beans or jalapeños to the layers. Experiment with different cheeses for a unique taste.
