Ingredients

- 4 cups watermelon, cubed
- 1/2 cup lemon juice
- 1/4 cup fresh mint leaves
- 1/4 cup honey or sugar (optional)
- 1 cup water
Instructions
- Combine in a blender the watermelon, lemon juice, mint leaves, and sugar (if using). Blend until smooth.
- Strain the mixture through a fine mesh sieve to remove any pulp, if desired.
- Pour the mixture into popsicle molds, leaving a little space at the top.
- Insert sticks and freeze for at least 240 minutes or until solid.
- Run warm water over the outside of the molds for a few seconds to release the popsicles. Enjoy your refreshing popsicles!
Notes
For a healthier option, use sugar substitutes like Stevia, Monk Fruit, or Allulose. Store in the freezer for up to 6 weeks.
