  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup corn (fresh or frozen)
  • 1/2 cup sour cream
  • 1/2 cup shredded cheese (optional)

Instructions

  1. In a large pot, cook the chopped onion and minced garlic over medium heat until softened.
  2. Add the chicken breasts and cook until browned on both sides.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the white beans, green chilies, corn, cumin, chili powder, salt, and pepper.
  5. Reduce heat and let simmer for 20-30 minutes, or until the chicken is cooked through.
  6. Remove the chicken, shred it, and return it to the pot.
  7. Stir in the sour cream and cheese (if using) until melted and combined.
  8. Serve hot, garnished with additional cheese or cilantro if desired.
