A delicious and comforting white chicken chili recipe that is perfect for chilly days.

- 1 lb boneless, skinless chicken breasts
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp ground cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup corn (fresh or frozen)
- 1/2 cup sour cream
- 1/2 cup shredded cheese (optional)
Instructions
- In a large pot, cook the chopped onion and minced garlic over medium heat until softened.
- Add the chicken breasts and cook until browned on both sides.
- Pour in the chicken broth and bring to a boil.
- Add the white beans, green chilies, corn, cumin, chili powder, salt, and pepper.
- Reduce heat and let simmer for 20-30 minutes, or until the chicken is cooked through.
- Remove the chicken, shred it, and return it to the pot.
- Stir in the sour cream and cheese (if using) until melted and combined.
- Serve hot, garnished with additional cheese or cilantro if desired.
Notes
- This chili can be made ahead of time and stored in the refrigerator for up to 3 days.
- For a spicier version, add jalapeños or cayenne pepper.
- Serve with tortilla chips or cornbread for a complete meal.
