Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined.
  3. Press the mixture into the bottom of a greased 9×9 inch baking pan.
  4. In a separate bowl, melt the white chocolate chips and let cool slightly.
  5. Beat the cream cheese and sugar together until smooth.
  6. Add the eggs one at a time, mixing well after each addition.
  7. Stir in the melted white chocolate and vanilla extract.
  8. Gently fold in the fresh raspberries.
  9. Pour the cheesecake mixture over the crust in the baking pan.
  10. Bake for 30-35 minutes or until the center is set.
  11. Allow to cool, then refrigerate for at least 4 hours before cutting into bars.
