A rich and creamy cheesecake swirled with luscious raspberry and white chocolate.

- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup sugar
- 4 (8 ounce) packages cream cheese, softened
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup white chocolate chips
- 1 cup fresh raspberries
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
- In a large mixing bowl, beat cream cheese and sugar until smooth.
- Add vanilla extract and eggs, one at a time, mixing well after each addition.
- Melt white chocolate chips and fold into the cream cheese mixture.
- Pour half of the cheesecake batter over the crust.
- Drop spoonfuls of raspberry puree over the batter and swirl with a knife.
- Pour the remaining cheesecake batter on top and repeat the raspberry swirl.
- Bake for 55-60 minutes or until the center is set.
- Let cool, then refrigerate for at least 4 hours before serving.
Notes
- For a stronger raspberry flavor, add more raspberries.
- Ensure the cream cheese is at room temperature for a smoother batter.
- Top with additional raspberries and white chocolate shavings for garnish.
