Ingredients

- 1 cup wild rice
- 2 cups vegetable broth
- 1 cup Brussels sprouts, halved
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
Instructions
- Rinse the wild rice under cold water and drain.
- In a pot, bring the vegetable broth to a boil and add the wild rice. Reduce heat, cover, and simmer for about 45 minutes or until the rice is tender.
- While the rice is cooking, heat olive oil in a skillet over medium heat. Add the diced onion and sauté until translucent.
- Add the minced garlic and Brussels sprouts to the skillet, cooking until the Brussels sprouts are tender and slightly caramelized.
- Once the wild rice is cooked, fluff it with a fork and combine it with the sautéed vegetables in the skillet.
- Season with salt, pepper, and stir in the chopped parsley before serving.
