Ingredients

- 3–4 lbs beef chuck roast
- 1 cup balsamic vinegar
- 1 cup cranberry sauce
- 2 cups beef broth
- 4 carrots, chopped
- 3 potatoes, diced
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 sprigs fresh rosemary
- Salt and pepper to taste
Instructions
- Preheat your oven to 325°F (163°C).
- Season the beef chuck roast with salt and pepper.
- In a large Dutch oven, sear the roast on all sides until browned.
- Add the chopped onion and garlic, cooking until softened.
- Pour in the balsamic vinegar and scrape up any browned bits from the bottom.
- Add the cranberry sauce and beef broth, stirring to combine.
- Place the carrots, potatoes, and rosemary on top of the roast.
- Cover and transfer to the oven, cooking for 3-4 hours until the meat is tender.
- Remove from the oven and let rest before slicing.
Notes
- For a thicker sauce, remove the roast and reduce the sauce on the stovetop.
- Serve with crusty bread to soak up the sauce.
