  • 1 cup balsamic vinegar
  • 1 cup cranberry sauce
  • 2 cups beef broth
  • 4 carrots, chopped
  • 3 potatoes, diced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 sprigs fresh rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Season the beef chuck roast with salt and pepper.
  3. In a large Dutch oven, sear the roast on all sides until browned.
  4. Add the chopped onion and garlic, cooking until softened.
  5. Pour in the balsamic vinegar and scrape up any browned bits from the bottom.
  6. Add the cranberry sauce and beef broth, stirring to combine.
  7. Place the carrots, potatoes, and rosemary on top of the roast.
  8. Cover and transfer to the oven, cooking for 3-4 hours until the meat is tender.
  9. Remove from the oven and let rest before slicing.

Notes

  • For a thicker sauce, remove the roast and reduce the sauce on the stovetop.
  • Serve with crusty bread to soak up the sauce.
